"Gran
Gotto Restaurant"
The
meaning of gutta is drop, if you speak Latin. Gotto
is another word stemming from gutta, thanks to the
language structures it may happen that the content
means the object that is contained in it. That’s
why gotto means glass, or small cup where wine is
poured.
At
the beginning of the XX century these premises –
formerly a wine shop – welcomed the workers
of the nearby slaughterhouse (it does not exist any
more) who wanted to taste a very good glass of wine
while playing cards and joyfully joking.
The
sign and the tradition of these premises are still
there today, even though the Gran Gotto is not a wine
shop any more but one of the best restaurants in town.
In
the 1930s these premises turned into a trattoria,
whose specialities were Tuscany’s dishes. In
1938, just before the war broke out, the shop is transformed
again thanks to the efforts of the father of today’s
owners. His name was Mario Bertola. In 1947 he started
the restaurant and specialised in typical and very
simple dishes, which was due to the economic difficulties
of those years.
Riccardo
and Sergio, his sons, grew up in their father’s
restaurant. They do not belong that kind of lifestyle
though. They understand our society is changing and
new trends are setting in. The restaurant is up-to-dated:
new menus and a great experience. Riccardo improves
and changes the way of cooking, he studies the ancient
Liguria’s recipes but he never just copies them.
He proves to be very curious and innovative. Sergio
works in the restaurant halls, he stays with the customers,
he suggests them what to eat and drink and start working
as a sommelier as well. He loves art, that’s
why he keeps in touch with the avant-guard painting
movements of the 1960s. He buys paintings and creates
an art collection, which customers can admire at his
restaurant.
This
is a new way to identify the restaurant: it is something
more than a simple, but anonymous, restaurant. It’s
a new "mood".
Customers
are enthusiastic: people coming from Genoa, who love
the healthy and tasty dishes and wine; foreigners
are fascinated by the food and the politeness of Riccardo
and Sergio; businesspeople choose this restaurant
for their business meetings and everyone chooses it
for a nice and intimate dinner.
