Noodles
dressed with mullet sauce
Ingredients:
Mullet
Sauce:
Mullets
500 Gr.
1 clove of garlic
1 tuft parsely
3 spoonfuls tomato sauce
1/2 glass wine
3 or 4 spoonfuls extra virgin olive oil
salt
pepper
Noodles
pasta:
white
flour 500 Gr.
3 eggs (yolk and white)
1 handful marjoram
salt
How
to cook them:
Mix
the flour and the eggs, add marjoram, salt and knead
everything until you get a homogenous dough. Work
the dough into a pastry and cut the noodles from it.
Wash
and slice the mullets. Brown them in a pot, add the
minced garlic and parsley.
Sprinkle
it with wine and let the wine evaporate.
Add
salt and pepper.
Mix
everything carefully and break the mullets up in small
pieces. Add the tomato sauce and mix the ingredients.
Boil the noodles in a potful of water, drain them
carefully and sauté them in a pot, mix them
with the sauce.
Serve
hot.
