SAUCE
Ingredients:

salted anchovies
2
garlic cloves
1
coffee cup full of tomato sauce
3
to 4 deciliters of Liguria’s extra virgin olive
oil
1
spoonful white wine
White
pepper (as needed)
How
to prepare it:
Peel
the garlic, remove the bones and wash the anchovies.
Crushethe boneless anchovies and garlic in the mortar,
add the tomato sauce and white pepper, dilute with
oil while stirring it. This sauce is a perfect dressing
for fish, stockfish and dried salted cod especially.
