GENOA’S
SAUCE OR "SARSA ZENEIZE"
Ingredients:
2
salted anchovies
1
peeled garlic clove
2
hard-boiled eggs’ yolks
1
spoonful stoned olives in brine
20
Gr. Bread crumb dunked in white wine vinegar
1
tuft of parsley
6
to 7 cl. Liguria’ s extra virgin olive oil
White
pepper ground on the spot
How
to prepare it:
Remove
the bones from the anchovies, wash them thoroughly
to wash salt away, mince the garlic and parsley. Crush
the pine seeds in the mortar, add all the other ingredients
but for the oil and pepper. Keep crushing the ingredients
until you get a creamy mixture. Add the pepper and
dilute with oil.
This
sauce is perfect with boiled fish.
