PANCAKES
Pastry:

Gr. Flour

glass wine
Water
and salt (as needed)
Filling:

kg. Chards

Gr. Grated Parmigiano Reggiano cheese

(as needed)
How
to cook them:
Bring
the chards to a boil and drain them very well. After
mincing them, add 1 egg, Parmigiano Reggiano cheese
and salt and mix everything. Sift the flour, dig a
hole in it, then add wine, 1 egg, salt and water (as
needed) and knead the ingredients. Work the dough
into 10cmX15cm pastries, then put a spoonful of filling
at the centre of each pastry and fold each one of
them as to get a triangle, press the edges to seal
each triangle. Put the "Gattafin" into a
pan with a lot of hot oil and fry them until they
are golden brown.
Serve
them in a dish; add hot meat sauce and Parmigiano
Reggiano cheese.
