FISH DUMPLINGS

Ingredients:

250 Gr. potatoes
150 Gr. flour
50 Gr. Parmigiano Reggiano cheese
400 Gr. boneless and boiled fish
pepper
salt
nutmeg

How to cook it:

Boil the potatoes and the fish separately, skin the fish and remove the bones. Mix the flour, Parmigiano Reggiano cheese, the mashed potatoes and the chopped fish in the same holder.

Mix all the ingredients until you get a smooth mixture, cut a portion of the mixture, stretch to get a kind of tube and then cut it into middle-sized dumplings, sprinkle them with flour and boil them in a potful of already boiling salted water for a few minutes. Drain them and dress as you like.
