How
to cook them:
Delicately
wash and dry the parsley twigs, clean the sage leaves
by means of a cloth or a sheet of blotting paper. Prepare
the batter; pour the flour into a bowl and slowly add
a little sparkling water, beat it up by means of a whisk
to avoid the creation of lumps. The batter has to be thin
enough. Heat a large amount of olive oil in a pan and
dunk the sage leaves and the parsley twigs into the batter,
drain them and fry the herbs in the hot olive oil until
they are well fried. Absorb the remaining olive oil by
using blotting paper.
Sprinkle them with salt.
Serve
hot with a tasty Liguria's white wine (Cinque Terre -
Pigato)
