Ingredients:

Gr. Chickpea flour
2
deciliters extra virgin olive oil

l. water

Gr. whitebait (bianchetti)

How
to prepare it:
Wash
the whitebait and let them strain in a strainer. Pour
water in a large bowl and add slowly the chickpea flour
into it: keep stirring it and add salt. Keep stirring
the ingredients to melt lumps, if any. Once the batter
is thin enough, let it stand for half hour at least. Skim
the surface of the batter and pour it into a baking sheet
with oil in it. Mix carefully the batter and the extra
virgin olive oil. Before putting it into the oven sprinkle
the surface of the batter with the whitebait. Let it cook
at a high heat for about 10 minutes, turn the baking sheet
to have the farinata cooked uniformly. When removing from
the oven, sprinkle it with black pepper.
