POTATO DUMPLINGS

Ingredients:

2 kg. potatoes

300 Gr. flour

salt

Pesto sauce

Grated Parmigiano Reggiano cheese

How to cook them:

Boil the potatoes, peel and mash them. Mix the mashed potatoes with as much flour as they can absorb it. Add salt and mix. Work the dough into many fingers, cut them into little pieces and press them onto the fork to shape the dumplings. Sprinkle with flour to prevent them from sticking to one another: boil them in a large potful of water and remove the pot from the stove as soon as they surface. Dress them with the Pesto sauce and sprinkle with Parmigiano Reggiano cheese.
