GENOA'S MINESTRONE SOUP

Ingredients:

100 Gr. fresh kidney-beans
3 potatoes
2 aubergines
150 Gr. string beans
200 Gr courgette or pumpkin.
300 Gr. seasonal cabbage
200 Gr. (in all) any kind of seasonal vegetables you are able to find
25 Gr. dried mushrooms
2 tablespoons extra virgin olive oil
200 Gr. rice or soup pasta
2 tablespoons Pesto sauce
salt

How to cook it:

clean, peel and shell all vegetables and beans, bring a potful of salted water to a boil and throw all the vegetables and beans into the boiling water after cutting them into little pieces. Marinate the dried mushrooms, squeeze and chop them and add them to the minestrone soup. Simmer for an hour. Add then rice or pasta and let it cook. Remove the pot from the gas cooker and add the watery Pesto sauce. Stir and serve it.
