ONION CAKE

Ingredients:

500 Gr. Flour
2 glassfuls extra virgin olive oil
800 Gr. White onions
4 eggs
250 Gr.Curds
80 Gr. Grated Parmigiano Reggiano cheese
15 Gr. Dried mushrooms
50 Gr. Butter
Salt
Pepper

How to cook it:

Mix the flour, 2 spoonfuls of oil and a little water and work into a piece of dough. Cut it into 4 pieces, cover them and let them stand for 1 hour. Peel the onions, cut them and bring them to a boil in salted water, leave them half-cooked, drain them. Have the mushrooms softened and mince them, brown the onions and mushrooms with butter and oil, add salt and let it cook for about 20 minutes. Let it cool down; add the Parmigiano cheese, salt and pepper. Mix carefully until you get a homogeneous mixture. Work the dough into 4 pastries, oil and lay them in a baking sheet, which you have already oiled. Pour the filling, spread the curds on it and cover everything with the 2 pastries left, which you have already oiled. Fold the pastries along their edges. Put it in the oven and let it cook at a medium heat for about 35 to 40 minutes.
