Potatoes
baked in a baking sheet
Potatoes
1 Kg
3 spoonfuls flour
1/4 milk
Tuma cheese 250 Gr. (typical kind of cheese)
Pecorino cheese 250 Gr.
2 spoonfuls extra virgin olive oil
1/2 hectogram butter
Peel
and horizontally slice the potatoes.
Pour
3 spoonfuls flour in a bowl, 1/4 milk and the minced
Tuma cheese (250 Gr.), the Pecorino cheese, a little
sliced onion, two spoonfuls oil.
Mix
the ingredients and add the sliced potatoes: mixed
everything carefully.
Oil
the baking sheet, pour the mixture in it, smooth it
and sprinkle with grated Pecorino cheese and the chopped
butter.
Let
it cook for 1 hour and cover the baking sheet.
This
is a typical dish belonging to the rural traditions
and you can cook it according to many different recipes.
The most important of all is that recipe envisaging
12 ingredients more than the potatoes only, i.e.:
parsley, thyme, pepper herb, garlic, onion, rosemary,
1 glass of milk, 1 entire tuma cheese, a little oil,
a little butter, salt and pepper.

using an iron rounded baking sheet ('a foglia), which
you put on the trivet (trempei) and cover with a lid
(testu). This is going to be an excellent and very
tasty dish and if you really want to enjoy it, eat
the potatoes by leaving them in the baking sheet.
