The fresh chestnut Trofie are a type of pasta typical of Ligurian cuisine, elongated, thin and twisted.
Their characteristic shape is obtained by rubbing small pieces of dough the size of a hazelnut on the palm of the left hand, using the thumb of the right as a cut.
Believed to originate from the area between Camogli and Bogliasco, in the province of Genoa, in local dialect they indicate "gnocchi".
Excellent with Genoese pesto, they can be seasoned with walnut or pine nut sauce and tomato sauces, especially fish sauces.

The fresh product can be stored in the refrigerator for 3 days and can be frozen and consumed within approximately 1 month.
