The Vermentino DOC Riviera Ligure di Ponente 2020 "Vini Liberi" by Rocche del Gatto is a white wine that manages to evolve over time with personality. You can drink it young today or wait and discover its aromatic path that it has been able to develop over the years. It is a harmonious and surprising wine. It stands out from any other Ligurian Vermentino for its very particular vinification compared to a white wine: in fact, the processing requires that the Vermentino grapes are considered as if they were red berries, therefore a maceration with indigenous yeasts in contact with the skins for at least three weeks; followed by a long stay on the noble lees, in tanks at a controlled temperature, and bottling only in the summer following the harvest; so then in the glass the wine will have a more recognizable organoleptic personality, with good minerality and aroma, a harmonious and complex white wine.
